A Good Weekend
This was a good weekend – a little work and a whole lot of fun. I worked in the yard, piddled in the house, found jewelry to wear with a dress that I bought for a wedding in Sept., ran twice, played tennis three times, and washed my car. I also went to the pool both Saturday and Sunday. It’s hard to believe that the pool will only be open two more weekends.
Tomorrow is the first day of school for students. I wonder if they are as nervous as I am? I have my lunch made, clothes ready, and I’ve cleaned up the kitchen and tidied up the house. (I hate leaving a messy house.) My goal for this school year is to wash the dinner dishes at night and not in the morning. I am terrible about eating dinner and then just collapsing. We’ll see how long I can make it.
I made pesto this evening. I froze most of it in an ice tray and tomorrow I’ll pop the cubes out and store them in the freezer in a plastic bag. I love using pesto over the winter, mostly on pizza or pasta.
Here’s the freshly washed basil. Love that smell. MMMmmm….
Pesto before adding freshly grated Parmesean.
I used a little of the pesto to make dinner. I bought a loaf of good bread at Kroger, split it in half, spread each half with a little cream cheese and then a little pesto, and finally added fresh tomato slices topped with a little more pesto. I baked it at 350 degrees for 15 minutes. Yum!
You are just tooooo much! All these years and I never knew what a Martha you truly are!!!! I am inspired.
YUM!! Great recipe! I am about to do a post on my favorite strata which has lots of pesto and tomatoes in it.
Ok, don’t laugh, I’ve never tried pesto. I’ve seen it used many times on the Food Network, but have never tried it myself. I may have to give it a try.
