Asparagus Squares :: Quick and Easy!

This tasty meal is perfect for a busy weeknight.

Ingredients

  • 2 (8 oz.) cans of crescent rolls (I use low-fat.)
  • 1 or 2 bundles of fresh asparagus (I use two.)
  • 1 Vidalia onion
  • 2 cloves of garlic, minced
  • 1 package of shredded cheese
  • Salt and pepper to taste

Instructions

  • Heat oven to 375 degrees. While oven heats, slice onion and cook over medium-high heat.
  • After onion begins to soften, add chopped garlic and season to taste with salt and pepper.
  • While the onion is cooking, rinse asparagus, snap off the tough ends, cut into one-inch pieces and reserve the tips. Sauté asparagus in a separate pan over medium-high heat.
  • After asparagus has cooked a few minutes, add tips to the pan and season to taste with salt and pepper.
  • Press crescent rolls into a 10 x 15” sheet pan. Bake for 6 – 8 minutes until lightly browned.
  • Spread onion mixture evenly over crust. Then spread asparagus over the onions. Top with cheese and bake for 6 – 8 minutes until the cheese melts.
  • Cut into squares and enjoy.

  • Quick, easy, and delicious meals are just what I like to prepare on a busy evening after a long day at work.  Asparagus squares take less than 30 minutes to prepare and require very few ingredients.
    I adapted this recipe from one I’d clipped from the August 2002 issue of Southern living.

    We really enjoy this for a weeknight meal and I’ve also served it as part of a ladies luncheon.  Cut into smaller squares, it would make a great appetizer, too.

    4. I am not a juge fan of asparagus. In fact the only way I’ve actully eaten it is with lobster bisque on top. But this actually looks delicious! I’ll definitely have to try it. Cheese and cresent rolls make everything better!

    5. I never would have thought to prepare asparagus like this. It’s like an asparagus pizza! Love it. I do love asparagus, but I also love artichokes… Yum!
